Oatmeal Butterscotch Cookies

When I find a great recipe I have to share it.  This is a recipe that originally came from Hersey’s, but my mom makes an amazing butterscotch cookie.  This weekend my family and I were craving them.  So I whipped them up.  Here is the recipe.

Ingredients:

3/4 sugar

3/4 packed brown sugar

3/4 cups butter

2 eggs

1 teaspoon vanilla extract

1 1/4 cups flour

1 teaspoon baking soda

1/2 ground cinnamon

1/2 teaspoon salt

3 cups quick cooking or old-fashioned oats

1 3/4 butterscotch chips

Directions:

1. Preheat oven to 375 degrees.

2. Combine butter, sugars, eggs, and vanilla in a large bowl.

3. Combine flour, baking soda, cinnamon, and salt.  Gradually add to the butter mixture.

4. Stir in oats and butterscotch chips.

5. Spoon dough onto an ungreased baking sheet. Bake 8-10 minutes.

These cookies are best when slightly undercooked.  My advice would be to pull them right at 8 minutes.  Loosen them from your baking sheet and let them set 3-5 minutes.  Then place them on a cooling rack. Also, they say you can use either the quick cooking oats or the old fashioned kind.  I think the cookies turn out better when you use the old fashioned oats.  Photographing food is a fine art.  So I had to practice.  The final product looks yummy.  Happy cookie making.
